Sunday’s are for sweets! In this case, lemon ricotta pancakes 🥞🍋 These are hands down the best pancakes I’ve ever made!!! They’re the perfect combination of sweet, light, cakey, and full of lemon flavor!! I started by combining 1 cup of milk with 1/2 tsp baking soda. Then, mix in 1/2 cup bellwetherfarms ricotta, 2 tbsp lemon juice, 1 heaping tbsp lemon zest, 1 1/2 tbsp sugar, 1 1/2 tsp vanilla, and one egg. Wisk thoroughly so there’s no lumps of cheese and ingredients are combined. Next, add in  3 tsp melted butter kerrygoldusa . Sift together 1 1/4 cup AP flour (bobsredmill one to one GF works too!) and 1 tsp baking powder. Mix into wet ingredients just until combined, do not over mix and let batter sit for 10-15 minutes. While batter was resting, I mixed a couple tablespoons ricotta with a little sugar and lemon zest and sliced my strawberries. Fry up pancakes, top with berries, powdered sugar, and a dollop of sweetened ricotta. Happy eating 💚🥞

I’ve been binge watching Top Chef, catching up on the last few seasons that I missed since Ryeson was born. 

One theme that keeps coming up is that a good dish doesn’t need to be over complicated, it just needs to be true to the creator. 

I can think of 1 million different ways this can apply in the marketing world — I see a lot of marketing campaigns trying to be everything to everyone, which leads to no target audience connecting with the content. 

So go back to what you or your brand is passionate about, and make sure those passions are shared with your audience (if you’re not sure, write them down, and ask your audience via Instagram Stories). 

And remember — if you like a piece of content or a marketing idea and you feel really passionate about it, most likely your audience will also.
Are you a “who cares about ricotta” person? I was like you once. No really, I was. Ricotta was for cooking and baking and that was about it - why eat ricotta as an actual cheese when there was a world of funk and stank to indulge in? Then, my life changed. I don’t know where I read it but an article said that $4.00 out of every $5.00 spent at restaurants right now is at a big chain. 😳 Definitely not happy about that stat — I know the big chains are cheaper, but the food sucks. ⁣

Tonight we had Chinese food from a Concord restaurant that is not on DoorDash. And a few nights ago, we had this simple dish with hodofoods tofu, asparagus, fresh pasta, pasta king pesto, bellwetherfarms cheese, homemade sourdough (from Jeff), and a salad from our garden. It has been one of the best meals we’ve made it home since this whole nightmare started. ⁣
