Roasted Carrot Bisque

Bellwether Farms Creme Fraiche
2 cups Carrots
½ Onion
1 bulb of Garlic
1 Lemon
1-2 cups Vegetable broth 1 tbs Fresh thyme
1 tbs Olive oil
1 tsp Ground cumin
2 tsp Salt
½ tsp Pepper


Add the diced carrots, thyme, onion, and head of garlic to a baking sheet lined with tin foil.

Drizzle with olive oil and season with ground cumin, salt and pepper. Roast until soft and let cool for 15 minutes before pureeing.

Add to blender and puree with vegetable broth until smooth and has the consistency of a bisque.

Stir in the juice of half of a lemon and taste again for seasoning.

Before serving, swirl in a generous amount of Bellwether Farms Creme Fraiche and sprinkle with more fresh thyme and cracked black pepper.
