Cuba’s famous cocktail becomes a delightfully decadent dessert perfect for picnics and summer parties.

Makes 1 9- inch square pan

Ingredients

Make the Crust

½ cup very cold butter
1 cup flour
½ teaspoon salt
2 Tablespoons finely chopped fresh mint
¼ cup powdered sugar

Make the Cheese Layer

7.5 oz container Bellwether Farms Fromage Blanc
1 egg
1 Tablespoon Rum
1/2 cup sugar

Make the Lime Layer

2 eggs
3 Tablespoons fresh lime juice (about 3 limes)
Grated rind of three limes
1 cup sugar

Directions

Preheat oven to 350 degrees. Into the bowl of a food processor, add flour, salt, powdered sugar and mint. Pulse just to mix. Cut butter into tablespoon size pieces and add to food processor. Pulse until butter is the size of peas.  Press the crust mixture into baking pan.  Bake15 to 20 minutes until light brown. Set aside to cool slightly. Reduce oven temperature to 325.

In a small bowl, mix cheese, egg, rum and sugar until well blended.

Into the bowl of the food processor, put eggs, lime juice, zest and sugar, Pulse until well blended.

Assemble and Bake
Spread the cheese filling evenly onto the baked and slightly cooled crust. Gently pour lime layer over cheese layer. Place in 325-degree oven for 30 minutes or until set. Refrigerate until chilled. To serve, sprinkle with additional mint and powdered sugar.
