Lenny Rice Moonsammy is a friend and gourmand who grew up in Oklahoma eating pimento cheese spread on white bread sandwiches. She’s upscaled her recipe with Bellwether Farms Fromage Blanc and aged Carmody cheese, and insists its best on a hamburger or with celery stick dippers.
Makes 3 cups


1 – 7.5 ounce cup Bellwether Farms Fromage Blanc
2 cups grated Bellwether Farms Carmody cheese
½ cup mayonnaise
¼ cup minced onion
1 - 4oz jar diced pimentos, drained
½  teaspoon minced or grated fresh garlic
½  tsp salt
½  tsp pepper
dash of Tobasco or favorite hot sauce (optional)


Mix all ingredients together. Cover and refrigerate for a few hours, or overnight for the best flavor.
