Chocolate Chip Ricotta Pancakes

1 cup of Bellwether Farms Whole Milk Ricotta
⅓ cup of chocolate chips
3/4 cup of Milk
1 1/2 cup of all-purpose flour
1/3 cup of granulated sugar
1 ½ tsp of baking powder
2 eggs
1 tsp Salt Butter or cooking spray

To serve

Powdered sugar
Maple syrup


In a small bowl, gently combine 1 ½ cup of flour, ⅓ cup of sugar, 1 ½ tsp of baking powder, ½ cup of chocolate chips, and 1 tsp of salt.

In a separate bowl, mix ¾ cup of milk and 2 eggs until combined.

Gently fold in 1 cup of Bellwether Farms Whole Milk Ricotta until incorporated into the mixture.

Combine the wet and dry ingredients, then heat a skillet over medium heat and melt butter to make sure the pancakes don’t stick.

Cook each pancake for 3-4 minutes per side until golden brown. Serve with maple syrup and powdered sugar.
