Serves 4-6 as a side dish
1 head of Radicchio, shredded
2 bu Watercress, stems removed
Dressing:
- 1/4 tsp. garlic, grated
- 1 T dijon mustard
- 1 T balsamic vinegar
- 1 T vergus (or white wine vinegar)
- 1/4 cup extra virgin olive oil
- salt and pepper to taste
- optional - chopped, cooked bacon pieces
- Bellwether Farms San Andreas or Pepato, shaved
Whisk all of the dressing ingredients together in bowl. Toss the greens with the dressing and place on serving dish. Shave the cheese on top and serve.
