Makes about 3 cups.
- 3 cups of shelled, blanched fava beans
- 6-8 mint leaves
- Juice of 1/2 lemon
- 1 cup grated Bellwether Farms San Andreas
- 3 each garlic cloves
- 1/3-1/2 cup Extra Virgin Olive Oil
- Salt and Pepper to taste
Place all in food processor and blend until smooth. Spread on crostini or serve with crackers.
